Double-Baked Potato Fluffy potatoes intermingled with chives and butter served in the skin, topped with shredded cheddar cheese. Mashed Potato Prepared in a variety of ways - original, garlic or cheesy. You decide - anyway they’re absolutely delicious. Oven Roasted Potato Wedges This is a low-fat version of a tasty treat, seasoned with Rosemary and garlic - you’ll definitely come back for more. Sweet Potatoes and Carrot Casserole with Molasses and Pecans A great vegetable side dish with lots of beta-carotene. (RR) Green Bean Casserole It’s debatable whether this is a side or a meal. Green beans layered in a creamy mushroom sauce, topped with onion rings - delicious! Eggplant Casserole Good enough to eat anytime of the day. Eggplant simmered in a cheesy tomato sauce topped with breadcrumbs. Green Beans with Coconut Sauce My family rates this as one of their favourite vegetable dishes. (RR) Baked Pepper Corn Squash Pepper Corn Squash baked to sweet perfection with butter, maple syrup and fresh ground pepper. Garlicky Spinach Tender leaves, sautéed in garlic and butter. Maple-Glazed Carrots Peeled baby carrots, tossed with maple syrup and parsley. Broccoli & Cauliflower a la bleu Casserole Tender heads of Broccoli and Cauliflower steamed with onion slices and mixed into a creamy blue cheese sauce. Cowboy Beans Everyone has their own secret recipe for beans, but after tasting this version you’ll always come back for more. Twice as Nice Coconut Rice A great alternative to plain old white - this fragrant rice tastes great with stir-fries. (CP) Hoisin Fried Rice Long grain white rice flavoured with finely diced onions, carrots, peppers, and snow peas in a hoisin-based sauce. Cornfused Comforting corn muffins great for dunking stews and chilies. Dropped Off Biscuits A low fat treat that’s great to eat. Whole wheat and onion sage biscuits go well with any meal.
